• Ted Child takes a look at the growing trend of foraging for spruce tips to flavour beer, and how they can help convey terroir, or a sense of place, in our beer. Speaking of terroir, cider expert Matt Cavers walks us through the process of wild fermentation—where cidermakers rely almost solely on the wild yeast that exists naturally on fruit—to make cider, and how this process allows for a much more complex flavour in the final product.
